Cut the acorn squash in half and remove the seeds. Slice a little notch in the bottom of each squash halve to help them stay upright. Brush the acorn squash with olive oil. Place the acorn squash, open side facing down, on a baking sheet. Bake on 400 degrees Fahrenheit for 30 minutes. In a large pot, add the olive oil and cook the onion and bell pepper for five minutes, stirring frequently. Add the olives and stir. Add the Swiss chard and cook for 3 minutes, stirring frequently. Add the Better Bean Co Tuscan White Beans and stir. Spoon the mixture into the acorn squash halves. Top with sea salt and pepper to taste.
