Tofu Breakfast Scramble Recipe

Ingredients:

  • 1/5 of a block of Firm Organic Tofu cubed
  • 2 cups chopped Kale
  • 1 medium Tomato (seeds and juice removed)
  • 1 Portabello Mushroom chopped
  • Vegetable Broth (as needed)
  • Few sprinkles of Turmeric for color
  • Black pepper (as desired)
  • 1/2 of an Avocado (sliced)
  • 2 slices Ezekiel Bread
  • Bowl of Berries (strawberries, blackberries, blueberries)
  • 1 generous (large) spoonful of Better Bean Company Cuban Black Beans(:
  • Cilantro (garnish)
  • Chives (garnish)

Instructions:

  1. Add a bit of vegetable broth, sliced mushrooms, and diced tomato into a medium sized non-stick pan.
  2. Sauté those ingredients until the liquid has cooked out of the mushrooms, then add in cubed tofu, a few sprinkles of turmeric (not for flavoring but for color), some freshly ground black pepper, and more broth if necessary.
  3. Once the tofu, tomato, and mushrooms have cooked for a few minutes longer, add chopped kale into the pan and cook until tender.
  4. When the flavors have melded and the scramble is good and hot, spoon it onto a plate, top with chopped cilantro.
  5. Serve with toast, sliced avocado, Better Bean Cuban Black Beans topped with chives, and a bowl of fresh, sweet berries.
  6. Enjoy!!

Serving Size:

1 - Double or triple for family or company!
