Super Bowl Football Quesadillas


  • For Quesadillas

  • Skillet refried red beans or chipotle red beans
  • Whole wheat tortillas or corn
  • Shredded Mexican cheese
  • Salsa
  • Sour cream
  • Tools

  • Pastry bag for making "laces" on each quesadilla
  • Mini football cookie cutter
  • Serve with

  • Salsa
  • Guacamole


  • Cut 20 football shapes out of the tortilla with the football shaped cookie cutter. 20 will make 10 quesadillas. Cut more for more, depending on your crowd
  • Heat skillet with some oil. Place tortilla in skillet. Sprinkle with cheese, dollop beans and add salsa. Top with another football shaped tortilla and flatten with a spatula.
  • Cook on both sides until browned – we are making footballs after all!
  • Place all quesadillas on a cookie tray when finished cooking.
  • Fill pastry bag with sour cream, snip the tip for a very small hole.
  • Here comes the hard part (steady hands!). Draw football laces on the quesadillas!
  • Plate and enjoy!
  • Can be made ahead and warmed before serving in an oven.
  • Serve with salsa and guacamole.
