Southwest Superfood Tortilla Soup


  • 1 tub Better Beans Cuban Black Beans
  • 1 cup corn
  • 1 diced onion
  • 1 1/2 cups chopped spinach
  • 1 quart Pacific tortilla base soup


Add all ingredients (except for the avocado) to a large pot. Bring to a slow boil. Reduce heat, cover, and cook for 15 minutes. Ladle the soup into a bowl. Top with the diced avocado and crushed tortilla chips.
