Protein Superfood Breakfast Muffins


  • 5 eggs (3 whole; 2 egg whites)
  • 3 heaping spoonfuls of Better Beans Skillet Refried Red Beans
  • 1/2 red onion, diced
  • 1/3 cup mushrooms, chopped
  • 1/3 cup spinach, chopped


Preheat oven to 400º. In a medium-sized bowl, add the eggs and mix well. Add the beans and continue mixing. Pour half of the bean/egg mixture into a muffin pan. Top with the onion, mushrooms, and spinach. Pour the remaining bean/egg mixture into the muffin pan. Bake for about 12-15 minutes. Serve with your favorite salsa.
