Cuban Black Bean Veggie Burger

Ingredients:

  • ¼ Green Bell Pepper, diced
  • ¼ Sweet Onion, diced
  • 1 Tub of Better Bean "Cuban Black Beans"
  • 1 tsp Garlic Powder
  • 2 Tbsp Bread Crumbs
  • 1 ½ Tbsp Flour
  • 1 Egg
  • 1 Heaping Tbsp Coconut Oil
  • Dressing the Burger:

  • Hamburger Buns
  • Lettuce
  • Tomato
  • Your favorite condiments

Instructions:

Add the bell pepper and onion to a food processor. Roughly process until mixture is chunky. Add the remaining ingredients (except coconut oil) and process for about 30 seconds. Carefully spoon the mixture into patties, put them on a large plate and set aside. Heat the coconut oil over medium-high heat in a large frying pan. Fry the patties for three minutes on each side. Part of the patties may come loose but you can press them back together with a spatula. Serve on a hamburger bun with your favorite toppings and condiments. Makes about eight patties.
