Caroline’s Mexican Pizza

Ingredients:

  • 1/2 can of fire roasted tomatoes or low sodium low fat red sauce
  • zucchini
  • spinach
  • tomatoes
  • onion
  • mushrooms
  • (any other veggies you like)
  • ezekiel sprouted grain tortilla
  • garlic powder
  • fresh basil
  • organo
  • rosemary
  • (any other spices you like)
  • Better Bean Roasted Chipotle Bean Dip (for serving)

Instructions:

  1. preheat oven to 400′ F and chop all veggies
  2. put fire roasted tomatoes onto tortillas and spread them around, try not to put on too much juice or else the pizzas could come out soggy
  3. add on all desired veggies and anything else you like
  4. pop the pan with you “pizzas” into the preheated oven and bake until the entire tortilla is firm, even the middle, that should be like 10-15 minutes, just watch it and don’t let anything burn
  5. remove from oven, the edges of the tortilla should be brown, and top with fresh basil, other dried/ fresh herbs, and granulated garlic
  6. slice, top with a spoonful of bean dip, and of course, enjoy!(:
