Over medium-high heat, cook the diced onion and bell pepper for five minutes. Add the Better Bean Co Cuban
Black Beans and stir. Add the pumpkin puree and corn, stirring again. In a large baking dish, layer two corn tortillas with enchilada sauce followed by the bean mixture. Repeat this process so that there are two layers. Bake for 15 minutes at 375 degrees Fahrenheit. Top with salsa, avocado, and cilantro.
