Black Bean Brownies

Ingredients:

  • 1 container of Better Bean Cuban Black Beans
  • 2 tbsp cocoa powder (add more if desired)
  • 1/2 cup quick oats
  • 1/3 cup maple syrup (note: I added around 2 tablespoons into the blender for extra sweetness)
  • 1/4 cup vegetable oil
  • 2 tbsp coconut sugar (or whatever sugar you have available)
  • 2 tsp pure vanilla extract
  • 1/2 tsp baking powder
  • 1/2 cup semi sweet chocolate chips (add more if desired)
  • 2 tbsp shredded coconut (add more or less to taste)

Instructions:

Combine all ingredients in a food processor or blender except the chocolate chips and coconut. Once the batter is smooth, stir in the chocolate chips and coconut. Spray or grease a pan prior to adding the batter, and top with extra chocolate chips, coconut, or nuts of your choice. Bake for about 18 minutes at 350º. Once finished cooking (a toothpick should come out with little to no residue from the brownies) let cool for at least an hour, although I recommend waiting for 2-3. Serve topped with a chocolate ganache, extra chocolate chips, coconut flakes, etc. or just eat as is!
