Ingredients: The Better Bean Company Red and Black Skillet Refried Beans are perfect for all Mexican recipes. Our Skillet Beans our actually sautéed in safflower oil to give the rich caramelized flavor of authentic refried beans usually only enjoyed south of the border. Directions: For best results sautée refried beans in a skillet in olive oil at medium high heat until beans are a bit crispy. Then set aside for recipes below or enjoy as a side dish. Ingredients: Better Beans Refried Beans Casa Rosa or Carmen's corn tortillas - (these use the simple ingredients of true tortillas.) Tillamook or equivalent cheddar cheese - grated Tomatoes - chopped Green Onions - chopped Olive Oil La Victoria Mild Green Sauce - (we personally prefer a rich mild green sauce) Directions: Fry tortilla in olive oil until semi-firm Place line of refried beans, grated cheese, tomatoes, green onions & sauce down middle. Fold tortilla and continue frying until tortilla crispy and cheese melted. Use plenty of oil to get best flavor in tortilla. Serve. Salsa Options: There are some great local salsa options including Tribal Sun, Zunegas, Original Taco House and True Nature. These salsas are great as a side for the tacos. Hot Sauce Options: There are a couple of very nice local hot sauces - Bad Monkey and Secret Aardvark Sauce. Add these in the tacos if you want more punch. Cuban Style Organic Black Beans Caribbean Style Black Beans are a popular side dish in many meals from the Caribbean and Central America. They are also frequently served with beans and rice or in South American Style Calentados. Our beans come with their delicious and nutritious pot liquor. Do not discard the pot liquor even if the recipe you are using calls for rinsed beans - use it as a base for another dish. Try to combine beans with grains to get a complete protein package. For best results add a little water to the beans before reheating so make the stew nice and soupy. Black Beans and Rice This staple dish is enjoyed throughout Latin America. Here is our variation: Ingredients: (for rice) 1 cup basmatic rice 1 cup water 1 cup white wine (use a cheap Chardonnay) 1 chopped green pepper 1 chopped small onion 1/4 cup olive oil 1 teaspoon salt 1 tablespoon garlic powder bouquet garnet of herbs of Provence - place two teaspoons in a tea ball One container (12oz) of Better Bean Cuban Style Black Beans Directions: Place olive oil in sauce pan and turn on high. Sauté onions, green pepper and rice until rice browns and onions get soft. (5 mintues) Place water, wine, salt, garlic, bouquet garnet in sauce pan, cover. Once boiling, put heat on low and simmer for 20 minutes. Do not remove cover. While rice cooking warm Cuban Style Beans with a bit of water in another sauce pan. After 20 minutes when rice is cooked add beans on top of or to the side of the rice. (Remove bouquet garnet). You can mix the beans with the rice but the distinct flavor of each is better enjoyed if you do not completely mix them. Serve. Alternatively, before serving you can fry the rice and beans in olive oil and garlic to make a little crispy. This is a great way to heat up leftovers the following day. South American Calentado This is a popular dish made from leftovers enjoyed throughout Latin America. The name Calentado roughly means stir fry. Here is one delicous variation: Ingredients: Precooked Rice from above Better Bean Caribbean Style Beans Chopped Peppers Chopped Onions Chopped Tomato Egg Compte, Gruyere (or other flavorful hard white chees) Garlic Powder Salt Olive Oil Black Truffle Oil Directions: Place olive oil in sauce pan and turn on high. Add all ingredients except egg, cheese and truffle oil and sautée until a bit crispy. Take a separate area in the pan and fry the eggs. Chop and mix eggs in with Calentado. Sprinkle cheese over Calentado and mix in. Finally add a liberal amount of black truffle oil. This is quite delicious and very nutricious. Note it is easy to add leftovers to make varients of this stir fry dish. The world deserves a Better Bean!
